I've developed a new bread; it's known as Mill Race Miche. Miche is the french term given to a large round loaf of bread, usually naturally leavened/sourdough and some as large as 12kg! Ours is on the smaller end of the range and weighs in at 1kg. It will make you think differently about whole grain bread. Features a moderately open, moist crumb and whole wheat flour from Arva Flour Mills north of London, Ontario. They source all of their wheat grain from farms in the immediate area. Support local farmers and eat your whole grains.
